Bacon Wrapped Shrimp & Grits

Shrimp and Grits are a southern classic brunch dish and is on every brunch menu at any restaurant in the south, no joke :) Fair warning, you might fall asleep after eating this dish. It is the true definition of comfort food. I have a recipe for shrimp and grits on my blog but I decided to take it up a notch. I wrapped the shrimp in bacon and made a cream sauce for the grits. The perfect combination for this dish! I promise, you wont want to have shrimp and grits any other way after you make this recipe. Start by deveining and de-shelling 1 lb of shrimp. Do not remove the tail of the shrimp, this keeps the shrimp from shriveling up smaller while cooking.

Cut 8 slices of bacon in half. This should make about 16 shrimp. Wrap the bacon around each shrimp.

In a bowl, add 1/2 stick of butter, 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of paprika and 1 tsp of blackening seasoning. Add the butter to a microwave and melt for 20 seconds. Remove from the microwave and stir.

Using a basting brush, brush the melted butter on each shrimp.

Add the shrimp to a 425 degree oven and cook 15-20 minutes or until the bacon is fully cooked and crispy.

While the shrimp are cooking, add 3 cups of chicken broth to a pot. Once the chicken broth starts to boil, whisk in 1 cup of grits and cook for 3-5 minutes or until the grits start to thicken.

Add 1/2 cup of shredded cheese, 1 tbsp of heavy whipping cream and salt & pepper (to taste) to the grits and stir. Taste to make sure it is seasoned to your liking. Be careful, the grits are hot.

In a sauce pan, add 1 tbsp of butter. Once the butter melts, add 1 tsp of minced garlic and 1/3 cup of diced onion and stir. Cook until the onions are soft.

Add 1 cup of heavy whipping cream to the pan and stir.

Season with salt & pepper (to taste) and stir well. Cook about 5 minutes or until the sauce starts to thicken.

Remove the shrimp from the oven. If the bacon is not fully crispy, turn the oven on broil and cook the shrimp for 1-2 minutes. Do not over cook.

Assemble the dish with a bowl of grits on the bottom and top with the cream sauce and the shrimp. Sprinkle green onions on top for extra flavor. Serve and ENJOY!

Ingredients

Bacon Wrapped Shrimp
  • 1 lb raw shrimp
  • 6-8 slices of bacon
  • 1/2 stick of butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp blackening seasoning
Cream Sauce
  • 1 tbsp of butter
  • 1/3 cup diced onion
  • 1 tsp minced garlic
  • 1 cup heavy whipping cream
  • salt & pepper (to taste)
Creamy Grits
  • 1 cup 5-minute quick grits
  • 3 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp heavy whipping cream
  • salt & pepper (to taste)

Instructions

Bacon Wrapped Shrimp
  1. Peel and devein the raw shrimp.
  2. Cut the slices of bacon in half and wrap around each shrimp.
  3. To a microwave safe bowl, add butter, garlic powder, onion powder, blackening seasoning and paprika. Add to a microwave for 20 seconds to melt the butter.
  4. Using a basting brush, fully brush the melted butter on each shrimp.
  5. Add to a 425 degree oven and cook 15-20 minutes or until the bacon is fully cooked and crispy.
  6. Once fully cooked, add on top of the grits and cream sauce.
  7. Serve and ENJOY!
Cream Sauce
  1. In a sauce pan and 1 tbsp of butter.
  2. Once melted, add onions and minced garlic and stir. Cook until the onions start to soften.
  3. Add heavy whipping cream and stir well.
  4. Season with salt & pepper and stir well. Cook about 5 minutes or until the sauce thickens.
  5. Serve on top of the grits.
Creamy Grits
  1. In a pot, add chicken broth.
  2. Once the chicken broth starts to boil, whisk in the grits and cook 5 minutes or until the grits start to thicken.
  3. Add 1 tbsp of heavy whipping cream, shredded cheese and salt & pepper (to taste) and stir well.
  4. Serve with the cream sauce and shrimp.
