Cajun Chicken Pasta

If I had to choose my favorite food, I would definitely say pasta. I never get tired of eating pasta! There are so many varieties and you can pair it with any protein and sauce. I love pastas that have ridges or areas where the sauce sticks to it. For this recipe, I used bow tie. The sauce is collected in the little cups in between where the pasta is pinched. This is a quick, easy and one pot recipe, which means there is very little clean up. If you do not want to use bow tie, feel free to use the pasta of your choice. Cook the pasta according to the package directions.

Grab two raw chicken breasts and cut them into thin strips. Season the chicken with garlic powder, onion powder and cajun seasoning.

In a plastic bag or brown paper bag, add flour and seasonings. You are going to toss the chicken breasts in the flour and make sure each strip is fully coated.

In a pan, add butter and vegetable oil. Once the butter has melted and the oil is hot, add the chicken. Cook 5-7 minutes per side or until the chicken is golden brown on both sides.

While the chicken is cooking, dice red, green and yellow bell peppers.

Once the chicken is completely cooked, add butter and minced garlic to the pan. Once the butter has melted, add the bell peppers and cook until they have softened.

Once the veggies are cooked, add heavy cream, grated parmesan, red pepper flakes and more cajun seasoning. Cook for 7-10 minutes or until the sauce thickens.

Add the cooked pasta to the sauce. Toss and top with parsley. Add the chicken on top and serve. ENJOY!

Cajun Chicken Pasta

Bow tie pasta tossed in a spicy and creamy sauce!

Ingredients

  • 2 chicken breast (Optional: 2 boneless skinless chicken thighs instead of breasts)
  • 2 tsps garlic powder
  • 2 tsps onion powder
  • 3 tbsps cajun seasoning
  • 3 tbsp butter
  • 3 tbsp vegetable oil
  • 3 cups of flour
  • 1/3 cup of green bell pepper
  • 1/3 cup of yellow bell pepper
  • 1/3 of cup red bell pepper
  • 4 cups pasta
  • 1/3 cup grated parmesan cheese
  • 1/2 tsp minced garlic
  • 1 tsp red pepper flakes
  • 2 cups heavy cream

Instructions

  1. Cook pasta according to package directions.
  2. Cut chicken breasts into thin strips. Season with 1 tsp garlic powder, 1 tsp onion powder and 1 tbsp cajun seasoning.
  3. In a plastic bag or brown paper bag add flour, 1 tsp of garlic powder, 1 tsp onion powder and 1 tbsp cajun seasoning. 
  4. Add the chicken to the flour and coat evenly.
  5. In a pan, add 3 tbsp butter and 3 tbsp vegetable oil. 
  6. Once the butter has melted and the oil is hot, add the chicken.
  7. Cook chicken 7-10 minutes per side or until golden brown on each side. 
  8. While the chicken is cooking, dice the bell peppers.
  9. Remove chicken and add 1 tsp of butter and 1/2 tsp of minced garlic.
  10. Once the butter has melted, add the bell peppers. Cook until the bell peppers have softened.
  11. Add heavy cream, 1 tbsp cajun seasoning, grated parmesan and red pepper flakes. Cook for 7-10 minutes or until the sauce has thickened.
  12. Add the cooked pasta and toss. 
  13. Top with the cooked chicken and parsley flakes.
  14. ENJOY!
