Chicken Wing Boil

Chicken Wing Boil

My best friend is allergic to seafood so she’s never had a seafood boil. She ran across a chicken wing boil and told me that I should make one for her. I did exactly that! I was skeptical at first because the flavors are normally for seafood but once I tasted everything together, this made me a believer! I will definitely be making this from now on. Especially since the cost of crab legs are ridiculous right now. For this recipe I used the small red potatoes, frozen corn and cut up the sausage into small pieces. To get started, fill an 8 or 12 qt. pot half way with water. To the water, add 1/2 cup of crab/seafood boil seasoning and 1/3 cup of lemon pepper seasoning. Depending on your preferred spice level, add more or less of the crab/seafood boil seasoning. The current amount is for a medium heat level.

Once the water has started boiling, add 1/2 stick of butter, sausage, corn and potatoes.

Cook 18-20 minutes or until the potatoes are soft. While the corn, sausage and potatoes are cooking, cut up the whole chicken wings into flats and drumsticks.

Add the chicken wings to a bowl and season them with 2 tbsp of cajun seasoning, 2 tbsp of onion powder, 2 tbsp of garlic powder and 2 tbsp of paprika and mix well. Make sure each wing is fully seasoned.

Add 1/2 cup of corn starch to the wings and mix well. Make sure each wing is fully coated.

Once the oil has reached a temperature of 350 degrees, fry the wings (7 or 8 wings at a time) for 5-7 minutes or until they are fully cooked.

Once the wings are fully cooked, add them to a baking rack to drain any excess oil.

Once the corn, sausage and potatoes are cooked, add them to a sheet pan along with the chicken wings.

In a pot, add 2 sticks of butter, 3 tbsp of minced garlic, 2 tbsp of paprika, 2 tbsp crab/seafood boil seasoning, 2 tbsp lemon pepper seasoning, 2 tbsp garlic powder, 2 tbsp onion powder, 2 tbsp of chili powder and 5 dashes of hot sauce and stir well.

Once the butter has melted, pour the sauce over the sausage, corn, potatoes and chicken wings. Serve and ENJOY!
