Butterscotch Blondies
BUTTERSCOTCH BLONDIES
You might be asking, what are blondies? Well, they are similar to brownies without the chocolate. I like to say if a cake and a brownie had a baby, it would be a blondie, kinda :) They are extremely easy to make and so delicious! Actually, blondies were around before chocolate brownies came along, which I didn’t know. I use to eat these as a kid and always loved them. You can get creative with these and use chocolate chips, pecans or white chocolate. I used butterscotch since I love the buttery flavor. Start by adding 1 1/2 cup of brown sugar to a bowl.
Melt 1 stick of butter and add it to the brown sugar. Using a hand mixer or a whisk, mix the butter into the brown sugar.
Add 2 whole eggs and 1 egg yolk to the mixture and mix them in one at a time. Add 1 tsp of vanilla to the batter and mix well. Make sure not to over beat the eggs.
Sift in 1 1/4 cup of flour and 1 tsp of baking powder.
Using a rubber baking spatula, fold the flour into the batter.
Add 1 1/2 cup of butterscotch chip morsels to the batter and fold it into the batter.
line a 9x12 baking sheet with cooking spray and wax paper.
Spread the batter evenly into the pan.
Add to a 350 degree oven and cook for 23-25 minutes, be sure not to over cook. Check the middle of the batter with a toothpick, if the toothpick is clean, take the blondies out of the oven.
Allow the blondies to cool and cut them into even squares.
Serve with ice cream and ENJOY!

Ingredients
- 1 1/2 cup brown sugar
- 2 eggs
- 1 egg yolk
- 1/4 tsp vanilla
- 1 1/4 cup flour
- 1 tsp baking powder
- 1 stick of melted butter
- 1 1/2 cup butterscotch morsels
Instructions
- Pre-heat the oven to 350 degrees.
- In a bowl, add the brown sugar and melted butter. Mix well using a hand mixer or a whisk.
- To the brown sugar and butter mixture, add 1 egg at a time and mix well. Add the egg yolk and mix well. Do not over beat the eggs or it will add too much air in the batter and it will make it "cakey" and not "chewy".
- Add vanilla to the batter and mix well.
- Add sifted flour and baking powder to the batter. Using a rubber baking spatula, fold the flour into the batter until it is fully combined.
- Add the butterscotch morsels and fold them into the batter.
- Spray a 9x12 baking sheet with cooking spray and then line it with wax paper.
- Evenly spread the batter onto the baking sheet.
- Add the blondies to the oven and cook for 23-25 minutes. DO NOT OVER-BAKE or they will be dry and cakey and not moist and chewy.
- Once they are ready, remove from the oven and let them cool for a few minutes. Serve and ENJOY!
