Baked Potato soup
When the weather outside is cold and you want a hot soup that will satisfy your taste buds and keep you warm, this is the soup for you. Plus, bacon is added to the soup and you know, anything with bacon, you know it has to be delicious. This soup is easy and will not take too much of your time. Grab 5 slices of bacon and cut them into small pieces. Put the bacon pieces in a pot big enough to hold the soup. Once the bacon has cooked, put them on a paper towel to drain the excess fat.
Do not remove all of the grease in the pot, save half of the bacon grease and add 1 tsp of butter, chopped onions and 1/2 teaspoon of minced garlic. Cook until the onions are soft.
While the onions and garlic are cooking, wash, peel and chop 7 russet potatoes.
Now it is time to boil the potatoes. Add 6 cups of chicken broth to the pot. Boil for about 20 minutes or until the potatoes are tender. Once they are tender, mash the potatoes. Make sure not to mash them completely, you want to leave a few chunks of potato in the soup.
Once the potatoes are mashed, add 1/2 cup of heavy whipping cream to the soup. This will give it a creamy texture. Add a few pieces of cooked bacon and 1/2 teaspoon of parsley flakes.
Make sure to add enough salt and pepper. 1 tsp of salt and 1/2 tsp of black pepper should be good, but taste it and add as much or little as you like.
Serve in a bowl and top with chives, bacon pieces and cheddar cheese. Your tummy will thank you. ENJOY!

Ingredients
- 7 russet potatoes
- 1/2 cup chopped yellow onion
- 5 strips of bacon
- 1/2 tsp minced garlic
- 1 tsp butter
- 6 cups chicken broth
- 1/2 cup heavy whipping cream
- 1/2 tsp parsley flakes
- 1/3 cup of chopped green onions
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cut 5 strips of bacon into small pieces. Cook the bacon pieces in a pot large enough to hold the soup. Remove the cooked bacon and put on a paper towel to drain the excess fat.
- In the same pan, add the chopped onions, butter and minced garlic. Cook until the onions are soft.
- While the onions are cooking, wash, peel and chop the potatoes.
- Add the potatoes to the onions and garlic. Stir and make sure the potatoes are coated with the oil, onions and garlic.
- Add chicken broth.
- Cook until potatoes are fork tender.
- Add heavy whipping cream. Stir and add salt and pepper. Optional: If you want to add some spice to the soup, add a few dashes of red pepper flakes.
- Serve in a bowl and top with chives, cheese and bacon pieces.
