Lobster Pizza
Lobster Pizza
One of my favorite appetizers to get at Red Lobster is the lobster pizza! Of course I had to re-create it and add my own twist to it. I know lobster tails are expensive so this recipe works with any seafood. I added fresh diced tomatoes and spinach to add a freshness to the pizza since the sauce is rich. You can mix up the cheeses if you would like, but I love mozzarella cheese on pizza. You could use gouda cheese or white cheddar. It is definitely your preference. Start by washing and de-shell the lobster tails.
Cut the lobster tails into 1 inch pieces.
Roll out 1 can of pizza dough on a baking sheet lined with parchment paper. Brush 1/3 cup of olive oil on the layer of pizza dough.
Add to a 400 degree oven for 10-12 minutes or until the pizza dough starts to firm and turn a slight light brown color.
In a pan, add 1 tbsp of butter and 1/2 tsp of minced garlic. Once the butter has melted, add the lobster pieces.
Season the lobster meat with 1/2 tsp of onion powder, 1/2 tsp of garlic salt and 1/2 tsp of paprika. Cook 3 minutes and set the lobster meat aside.
Add 1 tbsp of butter and 1 cup of heavy cream to the same pan. Mix well and simmer for 3-5 minutes.
Once the sauce starts to thicken, add 1/2 cup of shredded parmesan cheese and 1/2 tsp of red pepper flakes and stir well. Taste and season with salt and pepper if it is not seasoned to your liking.
Cook for another 2-3 minutes or until the sauce has fully thickened. Add layer the sauce on the pizza crust. Put as much sauce on the pizza as you would like.
Spread shredded mozzarella on top of the sauce. Make sure to cover the pizza.
Add 1/2 cup of freshly chopped spinach and 1/2 cup of fresh diced tomatoes. Spread evenly.
Top the pizza with the cooked lobster pieces. Make sure it is evenly spread out. Optional: top with bacon pieces for added flavor. My hubby added bacon pieces to his slice and he felt that I need to include this on the blog since it was so delicious.
Optional: For a more golden brown crust around the edges, brush the edges with an egg wash. Add to a 400 degree oven for 12-15 minutes or until the cheese is melted and the crust is a golden brown.
Remove from the oven and slice. Caution, it will be extremely hot! For a complete meal, serve with a salad and bread sticks. ENJOY!
