Stuffed Turkey Legs w/Crawfish Mac n’ Cheese

Stuffed turkey legs have been a popular thing lately, especially in Houston, Texas. Well, since I havent been able to visit the popular restaurant in Houston that sells the turkey legs, I decided to make my own. My daughter gave me the idea to make these and once I did, she was obsessed with them. You can stuff/top these with rice or any other carb you like, but I decided to make mac n’ cheese. I used store-bought smoked turkey legs for this recipe but feel free to smoke them yourself. If you decide to use the store-bought ones, wrap them in aluminum foil.

Add a splash of water on the bottom of the pan so that the aluminum foil doesnt stick to the turkey legs. Cook in a 375 degree oven for 2 hours or until the meat is tender.

Once the turkey is close to being fully cooked, add 1 tbsp of butter, 1 diced red bell pepper and 1/2 diced white onion to a pan. Cook until the veggies are soft.

Add 1 lb of pre-cooked crawfish tails and season with 1 tbsp of cajun seasoning, 1 tsp of paprika and 1 tsp of minced garlic. Cook for 2-3 minutes.

Remove the mixture and set aside. In the same pan, add 2 tbsp of butter and 1 tsp of flour and whisk well until it turns into a paste.

Add 2 cups of heavy whipping cream and 1/3 cup of milk and whisk well. Add 1 1/2 cup of shredded cheddar cheese and salt & pepper (to taste). Cook until the sauce thickens.

Add 3-4 cups of cooked pasta of your choice (I used cellentani) and the crawfish to the cheese sauce. Mix well.

Remove the turkey legs from the oven. Cut the middle of the turkey legs and add the mac n’ cheese to each turkey leg and top with extra mac n’ cheese.

In a bowl, add 1 tsp of melted butter and 1 1/2 tbsp of plain bread crumbs. Mix well.

Sprinkle the bread crumbs on top of the mac n’ cheese. Put in the oven on broil for 1-2 minutes or until golden brown.

Remove from the oven and serve with a salad or your favorite side dish. ENJOY!

Smoked turkey legs stuffed with pasta, crawfish and veggies tossed in a creamy cheese sauce.

Ingredients

  • 3 smoked turkey legs
  • 3 tbsp butter
  • 1 diced red bell pepper
  • 1/2 diced white onion
  • 1 lb crawfish tails
  • 1 tbsp cajun seasoning
  • 1 tsp paprika
  • 1 tsp minced garlic
  • 1 tsp flour
  • 2 cups heavy whipping cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/3 cup milk
  • 3-4 cups pasta type of your choice
  • 1 tsp melted butter
  • 1 1/2 tbsp plain bread crumbs
  • salt & pepper (to taste)

Instructions

  1. Pre-heat the oven to 375 degrees.
  2. Wrap the store-bought smoked turkey legs in aluminum foil. Cook for 2 hours or until the meat is tender.
  3. In a pan, add 1 tbsp of butter, red bell pepper and white onion. Cook until the veggies are soft.
  4. Add minced garlic, crawfish tails, cajun seasoning and paprika to the veggies and stir.
  5. Cook 2-3 minutes and then remove and set aside.
  6. In the same pan, add 2 tbsp of butter and flour and whisk until the flour turns into a paste.
  7. Whisk in the heavy cream.
  8. Add milk and cheddar cheese and stir. Cook until the cheese sauce thickens. Season with salt and pepper (to taste).
  9. Add cooked pasta and crawfish mixture to the cheese sauce. Stir well.
  10. Remove the turkey from the oven.
  11. Cut the middle of the turkey legs and add the mac n' cheese. Put extra on top.
  12. In a bowl, add the melted butter and bread crumbs and stir well.
  13. Sprinkle the bread crumbs on top.
  14. Add to the oven on broil for 1-2 minutes or until golden brown.
  15. Remove from the oven, be careful it will be hot.
  16. Serve and ENJOY!
