Homemade Shrimp Fried Rice
This was one of my mom’s favorite takeout dish. She rarely ate fast food or takeout food, but when she did, this was it! I have had my fair share of takeout shrimp fried rice and many times I was disappointed. Either the shrimp was over cooked or the rice was hard as a rock! So one day, I had enough and decided to start making my own. Ever since I did, I havent ordered takeout shrimp fried rice since! This is an easy and flavorful one pot meal, which means easy clean up! Cook 3-4 servings of rice according to the package directions. For this recipe, I used basmati rice but you can use long grain or brown rice, it’s your choice. In a pan, add butter and minced garlic. FYI, this dish requires a good amount of butter, so it’s not really on the healthy side but it is delicious!
Once the butter is completely melted, add the shrimp to the pan. Season the shrimp with paprika, onion powder and cajun seasoning for a little added spice. Cook for about 5 minutes or until the shrimp is completely cook.
Once the shrimp is cooked, remove from the pan and set aside. Dice 1/3 cup of white onion and add to the pan along with the frozen peas and carrots.
Cook for 3-5 minutes or until the vegetables have soften. In a separate bowl, mix 2 eggs and then add them to the side of the same pan as the veggies. You are going to scramble the eggs separately, then mix them with the veggies.
Add the cooked rice to the pan. Add more butter, garlic salt and soy sauce. Optional, to add some spice, you can add srircha along with the soy sauce.
Stir together and add the shrimp! ENJOY!
Shrimp Fried Rice
Ingredients
- 25 raw large shrimp
- 2 eggs
- 1 cup of frozen peas and carrots mixture
- 4 cups of rice
- 1/3 cup of onion
- 1/2 tsp minced garlic
- 1 tbsp paprika
- 1 tsp onion powder
- 1 tbsp cajun season
- 1 tbsp garlic salt
- 4 tbsp of butter
- 1/3 cup soy sauce
Instructions
- Cook 3-4 servings of rice according to the package directions.
- Peel the raw shrimp.
- Dice 1/3 cup of white onion.
- Add 2 tbsp of butter and the minced garlic to a pan.
- Once the butter has melted, add the shrimp to the pan. Season the shrimp with paprika, cajun seasoning and onion powder.
- Cook the shrimp until it has turned a light pink color.
- Remove the shrimp and add the onion and frozen peas & carrots mixture to the pan.
- Cook until the vegetables have soften.
- In a separate bowl, crack and mix together two eggs.
- Add the eggs to the same pan as the vegetables and scramble. Mix together.
- Add the cooked rice, soy sauce, 2 tbsps butter and garlic salt. Mix together until all of the rice is fully coated with the soy sauce. Optional: to add spice, add 1 tsp of sriracha.
- Add shrimp and serve!
