Taco Casserole

If you need a different twist on your normal “Taco Tuesday”, this is the perfect recipe! Its similar to a taco lasagna since it is layered with tortillas, ground beef and cheese. It’s easy to make and can feed a lot of people. Whenever I made this dish, I had enough to feed my family and the neighbors lol and everyone loved it! You can get creative with this dish and make it your own. I used ground beef but feel free to use ground turkey. Fully cook 2 lbs of ground beef.

Drain any excess grease from the ground beef and add 1/2 diced onion. Cook until the onions are soft.

Add 1 pack of taco seasoning and stir.

Add 1 14 0z can of diced tomatoes, 1 4 oz can of diced green chiles and 1 15 oz can of black beans and stir. Add 1/2 cup of water to the mixture and stir again.

Stir and cover with a lid and simmer for 8-10 minutes.

Remove the lid and stir again. Set aside. Spray a casserole dish with cook spray and line the casserole dish with flour tortillas.

Layer with shredded cheddar cheese, the ground beef mixture and more cheese. Repeat the layers until all of the beef mixture is used.

Top the last layer with cheese and cover the dish with foil. Add to 375 degree oven and cook for 30 minutes.

Remove from the oven and remove the foil and put back in the oven. Cook for another 15 minutes.

Remove from the oven and slice.

Top with sour cream and cilantro for a garnish. Serve and ENJOY!

Tortillas, ground beef, veggies and cheese layered in a casserole dish.

Ingredients

  • 2 lbs ground beef
  • 1/2 diced onion
  • 1 4oz can green chiles
  • 1 14oz can diced tomatoes
  • 1 15oz can black beans
  • 16-18 flour tortillas
  • 1 package taco seasoning
  • 4 cups shredded cheddar cheese
  • 1/2 cup water

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Fully cook the ground beef and drain any excess grease.
  3. Add the diced onion to the ground beef and stir. Cook until the onions are soft.
  4. Add taco seasoning to the ground beef and onions and stir well.
  5. Add the diced tomatoes, black beans, green chiles and water to the mixture and stir.
  6. Cover with a lid and simmer for 8-10 minutes and set aside.
  7. Spray the bottom of a casserole dish with cooking spray.
  8. Cover the bottom layer of the dish with flour tortillas. Top with a layer of shredded cheese and then the ground beef mixture. Repeat the steps until all of the beef mixture is used.
  9. Add cheese to the top layer and cover with aluminum foil.
  10. Put in the oven and cook for 30 minutes.
  11. Remove from the oven and remove the foil and put the dish back in the oven and cook for an additional 15 minutes.
  12. Remove from the oven and cut. Serve and ENJOY!
