Spinach Artichoke Dip
Spinach Artichoke Dip
Spinach dip is one of my favorite dips! Whenever you add artichokes, it adds an extra level of flavor. I have previously posted the recipe for spinach dip without the artichokes, but I enhanced my recipe and added a few more things to make it even more delicious. This is an easy and quick dip that is perfect to feed a crowd. Most recipes call for frozen spinach but I am not a fan of frozen spinach. It has A LOT of water in it. I recommend using fresh spinach. Just make sure to wash your spinach very well.
Chop 1/2 can of artichoke hearts. You don’t want to add an entire can, it can over power the spinach.
In a skillet, add 2 tbsp of butter and melt. Once the butter has melted, add the spinach and cook until the spinach has shrunken in size.
Once the spinach is fully cooked, use a pair of cooking shears to cut the spinach in smaller pieces.
In a bowl, add 1 package of softened cream cheese and the cooked spinach.
Add the chopped artichoke hearts, 1 cup of mozzarella cheese and 1/2 cup of parmesan cheese. Stir well.
Add 1 cup of heavy whipping cream, 1/2 tsp salt and 1/4 tsp pepper. Mix well.
Pour the mixture into an oven safe dish and top with more mozzarella cheese.
Put in a 400 degree oven for 15 minutes and 5 minutes on broil until the cheese has turned a golden brown color.
Remove from the oven and serve with chips or garlic bread. ENJOY!
