Mini Berry Trifles

If you need a delicious dessert that is easy to make, this is the dessert for you! Its very festive with the red, white and blue colors so you can use this for July 4th or Memorial Day decor. You can get creative with this recipe by using different berries for the compote and pound cake instead of an angel food cake. Feel free to make a cake for this recipe but I used store-bought, it saves time and it is just as good! If you are asking “what is a compote?”, it is a fancy way of saying “fresh fruit cooked in sugar” LOL. It is a berry sauce that can be used on top of any dessert, such as ice cream. It’s simple and easy to make. Start by washing your fruit and cutting the strawberries into smaller pieces. You can leave the blueberries and raspberries whole.

Add 1 cup of strawberries, raspberries and blueberries in a pan.

Add 1/4 cup of sugar, juice of 1/2 lemon and 1 tsp of corn starch. Mix well.

Cook for 8-10 minutes on medium heat or until the sauce thickens.

Cut the angel food cake into slices. Using a small to medium sized round cookie cutter, cut 3 circles of angel food cake.

Add the cake to the bottom of the cup.

Add 1 tbsp of the berry compote on top of the cake.

Add 1 tbsp of whipped cream on top of the berry compote.

Repeat the steps until you have reached the top of the cup. Top it with extra whipped cream and berries.

Serve with mint leaves for an added freshness and ENJOY!

Layered berry compote, angel food cake and whipped cream in mini sizes. The perfect red, white and blue dessert for the July 4th holiday!

Ingredients

  • 14 oz container angel food cake
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/4 cup sugar
  • juice 1/2 lemon
  • 1 can whipped cream
  • 1 tsp corn starch

Instructions

  1. Wash and cut the strawberries into small pieces.
  2. Add the strawberries, blueberries and raspberries to a pot.
  3. Add sugar, cornstarch and lemon juice to the berries and stir. Cook 8-10 minutes or until the sauce thickens.
  4. Cut the angel food cake into slices.
  5. Using a small to medium round cookie cutter, cut 3 circles from 3 slices of cake.
  6. Add one circle of cake to the bottom of a 5 oz cup.
  7. Add 1 tbsp of berry compote on top of the cake.
  8. Add 1 tbsp of whipped cream on top of the berries.
  9. Repeat the steps until you have reached the top of the cup.
  10. Top with extra whipped cream and berries. Serve and ENJOY!
