Watermelon & Feta Salad

The Summer in Texas is HOT right now!!! The heat is so disrespectful and I needed a light and fresh salad to keep me and my family cool. This watermelon & feta salad was perfect! Plus, I didn’t feel guilty while eating it. Its easy and you can get creative with this salad as well. Start by cutting a whole watermelon into cubes. You will need about 3-4 cups for this recipe.

Add 1/2 cup of crumbled Feta cheese, salt & pepper to taste and 1 tbsp of chopped fresh basil to the watermelon.

To the watermelon, add juice of 1/2 of a lime and 1 tsp of balsamic glaze and toss well.

Told you this was an easy salad to make. Stay cool!!! Serve and ENJOY!

Light and fresh salad made with watermelon, feta cheese, basil, lime juice and balsamic glaze. The perfect salad for the Summer heat!

Ingredients

  • 3-4 cups diced watermelon
  • 1/2 cup crumbled Feta cheese
  • salt & pepper (to taste)
  • 1 tbsp chopped fresh basil
  • juice of 1/2 lime
  • 1 tsp balsamic glaze

Instructions

  1. In a bowl, add watermelon, feta, lime juice, fresh basil, salt & pepper and balsamic glaze. Toss well.
  2. Serve and ENJOY!
