Grilled Salmon w/ Mango Salsa
I know its the beginning of the New Year and the number 1 resolution is always to eat healthy and exercise. Well, I have the healthy dish for you. Grilled salmon is always good but whenever you add mango to it, it takes it to another level. Just like pork and pineapple, salmon and mango are a match! I used a cast iron grill pan to cook the salmon but feel free to use an outside grill which works just as good. Add 1 tbsp of oil (vegetable or olive oil) and 1 tbsp of butter to the grill pan. Make sure each grill line is covered with oil. While your pan is getting hot, season the salmon with garlic salt, parsley and paprika.
Make sure your pan is extremely hot before adding your salmon. This will give the salmon the perfect grill marks. Add the salmon, depending on the thickness of the filets, cook 5-7 minutes per side for a medium-rare center and 10 minutes per side for a medium-well center. Do not over cook, you want your salmon moist.
While the salmon is cooking, dice red onion, mango, tomatoes and cilantro.
Add all ingredients to a bowl. Add 1/4 tsp of salt and 1/4 tsp of fresh lime juice.
Stir and add on top of the cooked salmon. Serve with rice and veggies for a complete meal. ENJOY!
Grilled Salmon w/ Mango Salsa
Ingredients
- 2 Salmon Filets
- 1 tbsp vegetable oil or olive oil
- 1 tbsp butter
- 1 tsp garlic salt
- 1 tsp paprika
- 1/4 tsp parsley
- 1 cup of fresh mango
- 1/4 cup of red onion
- 1/2 cup tomatoes
- 1 tbsp cilantro
- 1/4 tsp of salt
- 1/4 tsp fresh lime juice
- Optional: 1/4 cup jalapenos for spice
Instructions
- Grease a cast iron griddle pan with butter and oil (optional: you can use an outside grill for this recipe if you prefer).
- While the pan is getting hot, season each salmon filet with garlic salt, paprika and parsley on each side.
- Once the pan is hot, depending on the thickness of the filets, cook 5-7 minutes on each side, for a medium-rare center. For a medium-well center, cook 10 minutes on each side.
- Serve with rice and veggies.
- Dice the mango, red onion and tomatoes (optional: dice jalapenos for added spice to the salsa)
- In a bowl, add the diced mango, red onion, tomatoes, cilantro, salt and lime juice.
- Stir and add on top of the salmon.
