Stuffed Shrimp

The Holiday season is officially here and I have the perfect appetizer to get the meal started! These Stuffed Shrimp are a for sure crowd pleaser! If you are a seafood lover, then these will not disappoint! They are stuffed with lump crab meat. I know that it a little pricey, but it is definitely worth it. For this recipe, I used 1 lb of frozen super colossal size shrimp but you could also use fresh shrimp. If you use frozen, make sure they are completely thawed out before use. Pre-heat your oven to 400 degrees. Peel and devein the shrimp and cut a slit in the middle of the shrimp so they will sit flat in the pan.

Season the shrimp with 1 tsp of onion powder, 1 tsp of garlic salt, 1 tsp of blackening seasoning, 1 tsp of paprika and 1 tsp of lemon pepper seasoning and make sure the shrimp are coated in the seasoning.

Place each shrimp with the tail up in a cast iron skillet.

In a bowl, add 2 tbsp of mayonnaise, 1 tbsp of creole mustard, 3 tbsp of plain bread crumbs, 1 8 oz can of lump crabmeat and 1 tsp of cajun seasoning and mix well.

Spoon the mixture into the middle of each shrimp. Repeat until all of the crab mixture is gone.

In a bowl, add 1 stick of herb garlic butter and 2 tbsp of dry vermouth OR dry white wine and melt in the microwave.

Pour 1-2 teaspoons of butter on top of each shrimp. Reserve some of the butter for dipping.

Add the shrimp to a 400 degree oven and cook 20-25 minutes or until the shrimp and crab are golden brown.

Remove from the oven and serve with the reserved butter for dipping.

Squeeze some fresh lemon juice on top. Serve and ENJOY!

Seasoned butterflied shrimp stuffed with lump crabmeat and topped with an herb garlic butter and baked until golden brown.

Ingredients

  • 1 lb super colossal size shrimp
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1 tsp blackening seasoning
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp lemon pepper seasoning
  • 2 tbsp mayonnaise
  • 1 tbsp creole mustard
  • 3 tbsp plain bread crumbs
  • 1 8 oz can of lump crab meat
  • 1 tsp cajun seasoning
  • 1 stick of herb garlic butter
  • 2 tbsp dry vermouth OR dry white wine
  • 2-3 lemon slices (for garnish)
