Easy Macaroni n’ Cheese

The holiday season has finally arrived, which means family and food! I have cooked many different versions of Mac n’ Cheese and I can definitely confirm this is my favorite. Its super easy and flavorful! Did I mention there’s no roux? Well…..there’s no roux and it’s amazing! If you aren’t sure what a roux is, its a mixture of flour and butter to create a paste then once you add milk and cheese, you have a creamy cheese sauce. With this recipe, there’s no need for that and you will still get a creamy and cheesy Mac n’ Cheese. For this recipe I used elbow macaroni, since that’s what I had in my pantry but I normally use Cavatappi noodles, which has a corkscrew shape. Feel free to use any pasta of your choice. Fully cook 1 lb of pasta noodles according to the package directions and set aside.

Shred 3 cups of cheddar cheese and 2 cups of colby jack cheese and set aside. Reserve 1 cup of the cheddar cheese to use as a topping on the macaroni.

Once the pasta is fully cooked, drain any excess water and pour it into a large bowl or pot. Cut 1 stick of butter into slices and add it to the pasta and stir.

To the pasta, add 2 cups of heavy cream and stir.

Add the shredded cheddar cheese and colby jack cheese and stir well.

Season with 1 tbsp of onion powder and salt & pepper (to taste) and stir. Make sure it is seasoned to your liking.

Beat one egg and pour it in the mac n ‘ cheese mixture and stir well.

Pour the mac n’ cheese into an oven safe dish and top with the reserved shredded cheese.

Add the mac n’ cheese to the oven and cook at 375 degrees for 25-30 minutes. Cook on broil at 550 degrees for 1-2 minutes or until the mac n’ cheese is golden brown on top.

Remove from the oven and set aside. Be careful, it will be hot!

Serve with your favorite main dish. Serve and ENJOY!

Ingredients

  • 1 lb elbow pasta
  • 1 stick of butter
  • 2 cups of heavy cream
  • 3 cups shredded cheddar cheese (block of cheese)
  • 2 cups shredded colby jack cheese (block of cheese)
  • 1 egg
  • 1 tbsp onion powder
  • salt & pepper (to taste)

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Cook the elbow pasta according to package directions and set aside.
  3. Shred the cheddar cheese and colby jack cheese and set aside. Reserve 1 cup of cheddar cheese for the top of the mac n' cheese.
  4. Drain any excess water from the pasta and add it to a large bowl or pot. Cut the stick of butter into small slices and add to the pasta and stir well.
  5. Add heavy cream, 2 cups of shredded cheddar cheese and the colby jack cheese and stir well.
  6. Season with onion powder and salt & pepper, to taste. Taste to make sure it is seasoned to your liking.
  7. Beat 1 egg and add it to the mac n' cheese mixture and stir well.
  8. Pour the mac n' cheese into an oven safe dish and top with the reserved cheese. Feel free to add more on top.
  9. Cook in the oven for 25 -30 minutes.
  10. Change your oven setting to "broil" and cook at 550 degrees for 1-2 minutes or until the cheese is golden brown.
  11. Remove from the oven and serve and ENJOY!
