Chicken Satay w/Peanut Sauce
I recently took a trip to Thailand and absolutely fell in love with the food. Every dish I tried always taste so fresh. One of my go-to’s was Chicken Satay. I absolutely love this dish especially since I love peanuts and peanut butter. As soon as I returned home from my trip, I knew I had to make some. It is an easy dish that you can get on the dinner table pretty fast. Cut 1 lb of boneless, skinless chicken thighs into thin strips. You could also use chicken breast for this recipe, but chicken thighs add more flavor.
For the marinade, add 1/2 cup of soy sauce, 1/2 tsp of fish sauce, juice of 1 lime, 2 tbsp brown sugar, 1 tsp chili garlic sauce and 1 tbsp of garlic powder to a bowl and whisk well. Pour the marinade over the chicken and marinate for at least 30 minutes. Reserve 4 tbsp of the marinade to save for the peanut sauce.
Once the chicken has marinated, skewer each strip until all of the chicken is used up.
Add the chicken skewers to a greased hot griddle pan and cook 2-4 minutes on each side or until they have a golden brown color. Once browned, add the skewers to a baking sheet and cook in a 375 degree oven for 8-10 minutes or until the chicken reaches an internal temperature of 165 degrees.
In a bowl, add the reserved marinade (4 tbsps), 1 tbsp of peanut butter and 1/2 tsp of Sriracha sauce and whisk well. The peanut butter will start to clump up but keep whisking until it is smooth and creamy.
Drizzle the sauce on top of the chicken skewers and serve some extra on the side. Serve with jasmine rice for a complete meal. Serve and ENJOY!

- 1 lb boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 tsp fish sauce
- 1 lime
- 2 tbsp brown sugar
- 1 tsp chili garlic sauce
- 1 tbsp garlic powder
- 4 tbsp sauce marinade
- 1 tbsp of peanut butter
- 1/2 tsp Sriracha
Instructions
- Pre-heat the oven to 375 degrees.
- Cut the chicken thighs into thin strips.
- In a bowl, add soy sauce, brown sugar, fish sauce, juice of 1 lime, chili garlic sauce and garlic powder and whisk well.
- Reserve 4 tbsps of the marinade and set aside. Pour the remainder on the chicken thighs and marinate for at least 30 minutes.
- Once the chicken is marinated, add each strip to a skewer. Repeat until all of the chicken has been skewered.
- Add the skewered chicken to a greased hot griddle pan and cook 2-4 minutes on each side or until they are brown and have nice griddle markings. Remove from the griddle pan and set on a baking sheet.
- Once all of the chicken has been cooked, add them to the oven and cook for about 10 minutes or until the chicken has reached an internal temperature of 165 degrees.
- Drizzle the peanut sauce on top of the skewers and serve some extra on the side. Serve and ENJOY!
