Grilled New York Strip w/ Peppercorn Sauce

Why go to a steakhouse and spend over $100 on a steak dinner when you could have that same dinner at home? I had the same idea, so I decided to start preparing steak at home. My favorite steak cut is Ribeye, it has a good meat to fat ratio which adds a lot of flavor. I don’t eat any sauce with a good Ribeye, just butter, salt and pepper. Whenever I want a sauce on a steak, I always go with a New York Strip. It is not as fatty as a Ribeye but the added peppercorn sauce will add additional flavorful. The worst steak is a dry steak, so you always want to make sure you let your steak rest once you are done cooking. For this recipe I used 4 NY Strips and I let them marinate in seasonings.

For the marinade, add Worcestershire sauce, garlic salt, onion powder and steak seasoning (brand of your choice). Marinate the steaks for 2-3 hours before cooking. Make sure each steak is evenly coated with the sauce and seasonings.

Once your steaks are fully marinated, add oil and butter to a cast iron griddle pan. Once the pan is hot, you will see it start to slightly smoke, add the steaks. For medium to medium well, cook 8-10 minutes per side. Flip the steaks diagonally to get the “X” grill marks. Make sure your pan is really hot or you will not get the grill marks and a good crust.

Once your steaks are done cooking, place them on a baking sheet and allow them to rest. Letting your steak rest will cause the juices to circulate inside and create added moisture. Allow your steak to rest at least 10-15 minutes before slicing.

While your steak is resting, add 1 tbsp of butter to a saucepan. Once the butter has melted, add ¼ cup of whiskey of your choice. Don’t worry, the alcohol will cook out and it is only used for added flavor.

After about 3 minutes of cooking, add 1 cup of beef broth, 2/3 cup of heavy cream and 1 tsp of Worcestershire sauce. Cook for another 3 minutes and then add 1 tbsp of whole peppercorns and ¼ tsp of salt.

Stir well using a whisk. Cover and simmer for 10-15 minutes. The sauce will thicken.

Slice the steak and pour the sauce over the steak or serve it in a gravy bowl. Pair with some side dishes and ENJOY!

Ingredients

New York Strip
  • 4 New York Strips
  • 1 tbsp garlic salt
  • 1 tbsp onion powder
  • 1 tbsp steak seasoning
  • 1/3 cup Worcestershire sauce
  • 2 tbsp of butter
  • 1 tsp of vegetable oil
Peppercorn Sauce
  • 1 tbsp butter
  • 1/4 cup whiskey
  • 1 cup beef broth
  • 2/3 cup heavy cream
  • 1 tbsp peppercorns
  • 1 tsp Worcestershire sauce
  • 1/4 tsp salt

Instructions

  5. For medium to medium well temperature, cook 8-10 minutes on each side. 
  6. Once the steaks are cooked, let them rest at least 10 minutes before slicing.

  2. Once the butter has melted, add ¼ cup of whiskey of your choice.
