Lemon cake is my daughter’s favorite cake flavor. She loves the sweet and tanginess that it has. Anytime we go to Starbucks, she always gets their lemon loaf. Instead of paying $4 for a slice of lemon loaf, I decided to make her own. This is an easy recipe but it is packed with flavor! My daughter said my lemon loaf taste better than Starbucks. That made me happy! Feel free to make this cake from scratch, but anytime I am making a cake, I use box cake mix and spruce it up. Even though I am using box cake mix, I still make sure to separate my wet and dry ingredients. Start by adding 3 eggs to a bowl.
To the eggs, add 1 cup of whole milk, 1/2 cup of canola oil, 1 tbsp of sour cream and 1/8 tsp of lemon extract. Whisk well.
To the wet ingredients, add 1 box of lemon cake mix and mix well.
Spray a 9x5 loaf pan with canola oil spray. Feel free to use parchment paper as well.
Pour the cake batter into the loaf pan.
Add to a 350 degree oven for 35-40 minutes or until the cake is fully cooked.
To make the icing, in a bowl, add 1 cup of powder sugar, 1 tbsp lemon juice (juice of 1/2 lemon) and 1 tsp of milk. Whisk well until the icing has a creamy texture.
Once the cake has completely cooled, pour the icing on top of the cake.
Cut the edges off of the cake.
Slice the cake into 1-2 inch thick slices. Serve and ENJOY!

Ingredients
- 1 box lemon cake mix
- 1 cup whole milk
- 3 eggs
- 1/2 cup canola oil
- 1/8 tsp lemon extract
- 1 tbsp sour cream
- 1 cup powdered sugar
- 1/2 lemon
- 1 tsp whole milk
Instructions
- Preheat oven to 350 degrees.
- In a bowl, add eggs, canola oil, milk, lemon extract and sour cream. Whisk well.
- To the wet ingredients, add the box of cake mix and mix well.
- Spray a 9x5 loaf pan with canola oil and pour the cake batter in the pan.
- Cook in the oven for 35-40 minutes or until the cake is fully cooked.
- Remove from the oven and allow the cake to cool completely.
- Pour the lemon icing over the cake.
- Slice the cake into 1-2 inch thick slices. Serve and ENJOY!
